The Sussex is owned and run by Chef Dave Coffey & General Manager Damien Quinn, both industry stalwarts. David, with almost twenty years experience in the industry having worked in Dish, O'Connell's, Elephant & Castle, has always been passionate about using fresh and local quality produce.
Damien comes from well known eatery The Green Hen, having previously managed the 450 seater Tivolli Theatre. Both have worked abroad in countries such as Spain, San Francisco, and Australia, and have combined their worldly experiences of the industry.
One of The Sussex's most attractive features is their impeccably sourced suppliers list, including their meats, seafood and organic fruit & vegetables, all of which are credited on the menu showing their provenance. Ensuring their ingredients are of the highest quality possible, and choosing fresh and local produce is almost as important as the finished dish itself!
